DASSAI Junmai Daiginjo 45 (獺祭 純米大吟醸45) BY: 21

Price: 1,738 yen, Value: 5.0(/5), Rating: 19.5(/20)

Area: Yamaguchi prefecture

This is likely one of the most famous Junmai sakes in Japan. (What is Junmai(純米)?)

If you’re new to sake and unsure about which one to try, we recommend starting with this one. In terms of flavor, it can be described as quite fruity, typical of modern sakes. If you like white wine, you’ll likely enjoy it.

Within the community of sake aficionados in Japan, there are those who say, “Dassai isn’t real sake. It’s made too systematically, lacking the important element of tradition.” However, considering its widespread acceptance in the market, it’s hard to find someone who dislikes it.

As the chart below shows, Dassai 45 is clear, fresh, and has a slightly grassy aroma reminiscent of Sauvignon Blanc. Honestly, it’s hard to believe that this sake is made solely from rice!
